Classic Baked Chicken & Gnocci

The Gnocci - Cook any kind you like and set aside.

The chicken - Pat chicken breast dry, brush with olive oil, place on a baking sheet then salt and pepper. In a bowl mix bread crumbs, shredded mozzarella, a pinch of salt/pepper, and enough olive oil to make it pasty. Cover the chicken breast with the mixture and bake in the oven at 425 degrees for about 25 minutes until cooked through.

The sauce - In a food processor combine a 28oz can of Peeled Tomatoes (I prefer San Marzanos), an 8oz can of tomato sauce, a glove of garlic..... then add salt, pepper, onion powder, basil, and oregano. Chop mixture in the processor until the sauce is blended and still somewhat thick (not too watery). Add a good shot of olive oil and quickly pulse a few more times.

Add the sauce to a medium-sized saucepan and heat over medium heat. Add your gnocchi to the pan and mix until everything is combined and hot. Plate gnocchi and chicken then top with shredded parmesan cheese.
