Chicken Pepperoni & Fettuccine
Butterfly cut two chicken breasts to create a pocket then
pound the breasts into an even thickness. Coat the chicken in olive oil and
salt/pepper to taste. Pan-fry the chicken until cooked then remove from the
pan.
Stuff the chicken with turkey pepperoni and slices of
mozzarella cheese. Layer the top of the chicken with more pepperoni and cheese.
Place the chicken on a baking sheet and broil on high (or bake at 400 degrees)
until the cheese is bubbly and beautiful.
